Emmer & Rye Hospitality Group to Debut Barberry Inside Revitalized River Walk Landmark

A major culinary transformation is taking shape along the San Antonio River Walk as the Michelin-celebrated Emmer & Rye Hospitality Group prepares to unveil its newest dining venture, Barberry. The restaurant is scheduled to make its debut inside the extensively overhauled Sítio El Tropicano hotel, establishing a new flagship dining presence near downtown San Antonio.

The restaurant's debut is projected for mid- to late November, coinciding with the broader reopening of the landmark 64-year-old lodging establishment. Current activity across the site features the energetic sights and sounds of a comprehensive, top-to-bottom renovation aimed at restoring vitality to the historic riverside address.

Originally launched in 1962, the hotel holds a distinguished place in regional hospitality history as the very first establishment of its kind to open on the River Walk. Over the decades, it operated as a celebrated retreat that welcomed high-profile dignitaries and entertainment icons, including President Lyndon B. Johnson, music legend Dolly Parton, and the Rolling Stones.

Despite its storied past and recognizable Las Vegas-deco architectural branding, the property experienced fluctuating prominence in the local cultural landscape over the years before eventually shutting its doors in 2020. The current floor-to-ceiling restoration of the 315-room structure is being directed by the development firm Trestle Studio, which is overseeing the full reimagining of the property.

Handling major buildouts amidst the dust of active construction is a familiar endeavor for the Emmer & Rye Hospitality Group. The team previously navigated massive developments to launch prominent culinary destinations at Pearl, including the expansive Pullman Market development and the acclaimed Mediterranean restaurant Ladino.

The hospitality group brings considerable prestige and Michelin pedigree to the newly revived River Walk property. Within the Pullman Market footprint, the dining concepts Nicosi and Isidore each earned a coveted Michelin star, while the group's concepts Ladino and Mezquite both received prestigious Michelin Bib Gourmand honors.

Barberry will be guided under the leadership of veteran California chef Evan Allumbaugh, who serves as the food and beverage director for Emmer & Rye's hotel division. He will direct the operation alongside Tavel Bristol-Joseph, a partner and chief operating officer at Emmer & Rye who also served as the visionary behind the group's Michelin-starred dessert lab, Nicosi.

The restaurant derives its name from the barberry shrub, a plant known for producing tart, edible berries. From a thematic standpoint, the culinary leadership envisions the venue functioning as an authentic Texas Hill Country restaurant interpreted through the diverse cultural heritage of the surrounding region.

Central to the restaurant's operational identity is a rigorous sourcing philosophy that highlights regional purveyors and agricultural ecosystems. The culinary program guarantees that 100 percent of all land animals are sourced strictly from Texas, 100 percent of seafood offerings originate from the Gulf, and produce is supplied on a market-driven basis from local farms located around San Antonio.

The planned menu showcases a diverse array of dishes that reflect this regional commitment. Previewed menu items include wagyu beef tartare, chicken-fried quail, crab claws, an heirloom tomato salad, a colorful Stetson chopped salad, and sweet corn raviole du Dauphiné, a delicate pasta preparation described as possessing the puffiness of a down jacket.

Designed to seat 140 guests, Barberry will initially welcome patrons for breakfast and dinner services upon its grand opening. A daytime lunch service is slated to be incorporated into the restaurant's regular operating schedule at a later stage of its rollout.

The dining experience will be complemented by a specialized beverage program developed by key Emmer & Rye leaders. The wine offerings are curated by the group's wine director, Alicia Schmidt, while the cocktail program is directed by Houston Eaves.

Barberry stands as the centerpiece of a comprehensive hospitality portfolio that Emmer & Rye will oversee throughout the Sítio El Tropicano property. The hospitality group is tasked with managing all dining and refreshment aspects across the hotel to create a fully integrated guest experience.

Beyond the flagship restaurant, the culinary scope includes a relaxed coffee bar and cafe, catering services for a private venue called the Sítio Club, around-the-clock room service, and specialized refreshments tailored for the property’s 5,000-square-foot spa facility.

Additionally, the group will operate a dedicated pool bar featuring an exclusive food and beverage menu situated on what is described as San Antonio's largest hotel pool deck. Tucked away from street view and the historic El Tropicano sign, the amenity serves as a secluded oasis designed to anchor the hotel's modern revival.
